Mushroom Pâté

Ingredients:

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1/4 cup white wine or vegetable broth
  • 1/4 cup heavy cream or coconut cream (for a dairy-free option)
  • 1 tablespoon soy sauce or tamari
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions:

  1. Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the garlic and cook for an additional minute until fragrant.

  2. Cook Mushrooms: Add the chopped mushrooms and thyme to the skillet. Cook, stirring occasionally, until the mushrooms are tender and any liquid they release has evaporated, about 8-10 minutes.

  5. Season and Adjust: Taste the pâté and season with salt and black pepper to your liking. If the pâté is too thick, you can add a bit more cream or broth to reach your desired consistency.

  6. Chill: Transfer the pâté to a bowl or jar and refrigerate for at least 1 hour to allow the flavors to meld and the pâté to firm up.
